Simple Homemade Recipes – Bran Flake Muffins

Bran Flake Muffins

3 c bran flakes
1 c boiling water
2 1/2 c flour
2 1/2 t baking soda
1/2 t salt
1/2 c shortening
1 1/2 c sugar
2 large eggs
2 c buttermilk

Combine bran flakes and boiling water in a bowl. Let stand ten minutes. Sift together flour, baking soda & salt, set aside.

Cream together shortening and sugar in large mixing bowl until light and fluffy, using electric mixer. Add eggs one at a time beating well after each addition.

Stir in bran flakes mixture with creamed mixture. Add dry ingredients alternately with buttermilk to creamed mixture, mixing just enough to moisten. Spoon batter into greased muffin pan-filling 2/3 full. Bake in 400 degree oven for 25 minutes.

This recipe makes 24 muffins.

Katie made these for us today and they are simply delicious. They are the best bran muffins I’ve ever had, we’ve used this recipe many times before and it’s definitely a keeper. In the photo are some all ready to eat with some real butter from the butter bell!
